World Coffee Research connects the coffee industry with coffee producers and cutting-edge science. Several years ago they developed the Sensory Lexicon, a tool for understanding and measuring coffee's flavors and aromas.
In this workshop we’ll focus solely on the Fruity Aroma section of the Sensory Lexicon. We’ll be using just our olfactory sense to blindly compare unmarked cups of standardized aroma references (e.g. Sunsweet Amaz!n Prune Juice corresponds to a 3.0-level intensity of dried fruit aroma in the Sensory Lexicon).
